Choose your attitude

I have had a LAZY weekend and loved every minute of it.  I finished the Jodi Picoult book Change of Heart in 3 days and her books are long. It was a good book a little predictable but a good story that definitely made you think.

It rained Friday night and all day Saturday so I didn’t feel too bad being a bum. Today I didn’t really have an excuse but it was still nice to be a little lazy with how crazy my schedule has been!

Food

I started my rainy Saturday off with a nice warm bowl of oats.

My oatmeal was made with:

  • 1/3 cup oats
  • 2/3 cup unsweetened vanilla almond milk
  • 1/2 small banana
  • splash vanilla extract
  • pinch of cinnamon
  • 1 scoop almond butter
  • 1/4 cup granola on top

I tried to my final single serve packet of the Bare Naked granola (no picture sorry!). It was the banana nut kind and was definitely my favorite! What sold me? The little bits of dried banana in it! It was great on my oatmeal. Would I buy a full size bag? Maybe but I’m not sold on the texture.

For dinner last night I made a simple meal

My dinner was steamed broccoli, roasted sweet potatoes and garlic chicken.  Here is my garlic chicken recipe:

Marinate 4 oz chicken in 2 tbsp olive oil, a clove of crushed garlic, and salt and pepper to taste. I let sit for about an hour in the fridge. Once I’m ready to cook it I heat a dry skillet (no extra oil needed) on medium heat.  Cook the chicken for about 8 minutes on each side.

It’s so simple and it comes on crispy on the outside and moist on the inside. Yum!! I ate about 2oz of the chicken and saved the rest.

For breakfast this morning I decided to make a breakfast panini.

This was phenomenal! The filling was

  • 1 egg and 1 egg white
  • chopped yellow, orange and red peppers (about 1/3 cup)
  • 1/8 cup chopped red onion
  • 1/8 cup shredded Mexican cheese
  • 1/3 avocado

I grilled the peppers and onions in a skillet before I added the eggs. I scrambled them all together. Topped on piece of whole wheat bread with avocado and the other with the Mexican cheese and put the egg mixture on top. I them threw the sandwich in the George Foreman to melt it all together.

This was so filling I couldn’t even finish the whole thing!

When lunch rolled around I wasn’t that hungry so I made a nice light lunch. A whole wheat wrap pizza

There was very little cheese on this so it was nice and light. I used a mix of veggies, about 1/4 cup tomato sauce, and about 1/8 cup cheese.

The key to cooking these is to keep your oven on about 350 degrees. If you put it too high the side get burnt and the middle is soggy! I had a few misses with these before I got it completely right.

Dinner was a stir fry that used the rest of last nights chicken, a frozen veggie mix, whole wheat spaghetti, and my favorite sesame ginger sauce.

I love stir fries. I think it’s great for people that don’t necessarily love veggies. Just watch the amount of sodium from the sauces you use!

Training

This weekend I didn’t do much training wise. I had intentions of going for a long run today but I had quite the lazy attitude to go along with my weekend.

I did a 1.5 mile run today and then 20 minutes of yummy yoga. I did yoga for hips #1 and #2. It was great and really loosened me up a lot.

Has anyone ever read the book or seen the video Fish! – it’s generally geared toward work sites and is used to help improve employee’s moral and attitudes. A few of the places I have worked over the years touch upon it but it really hit home today with me on my run. Funny, I know.

I just realized that I hadn’t concentrated on my run at all during the day. I concentrated more on relaxing so when I left the house for my run I was lax and a bit careless. I didn’t beat myself up over this because I truly feel that with the way my schedule has been I needed a weekend like this. I chose to have a lax attitude today. Does this mean I will be like this for the rest of the week? Absolutely not. I am still training for a half marathon that is only 8 weeks away. I know I will have to step it up. I will choose to have a strong and determined attitude this week.

Do you notice that your mood changed when you choose your attitude?

I notice it all the time – it doesn’t just have to do with workouts! I can be annoyed with something at work and will have to tell myself to change my attitude about it. It really helps to be aware that you can control it!
