Dreary Day

It is a very dreary day here in Boston. Luckily, I have no plans so it should be the perfect day to relax!

Training

Yesterday was perfect running weather – cool and very little humidity. I did 2.8 miles in 28:13.  I felt great. I think the key to this run was I didn’t plan exactly where I was going. I just ran. The stress from the day before was gone and it made was a really relaxing run. I’m happy to have gotten back on track!

I had to babysit last night so after I put the kids to bed, I did some strength training. I ended up doing

  • 3o push ups
  • 50 regular crunches
  • 100 bicycle crunches
  • 50 crunches to the front with my legs flat on the ground
  • 30 tricep dips
  • 2 – 15 second planks

It was quick but I was happy to get some strength in. I was wearing jeans so I couldn’t do any legs. I’ll do them on Monday though.

Food

When I got home from my run last  night I had plenty of time before Garrett got home to make dinner. I decided to make something  I haven’t made in a while – Pistachio Encrusted Honey Mustard Chicken

This is a great recipe. It is based on this recipe from allrecipes.com.

I used

  • 1/2 chicken breast tenders
  • 1/4 cup bread crumbs
  • 1 cup pistachio kernels  (measured then chopped)
  • 2 Tbsp honey
  • 2 Tbsp dijon mustard
  • 2 Tbsp Extra Virgin Olive Oil
  • Salt and Pepper

I mixed the wet ingredients together and put the chicken in. I let it marinade for about 20 minutes, flipping halfway through. I then mixed the dry ingredients and coated the chicken with them and put them on a greased (very important!) cookie sheet. I cooked for 20 minutes in a preheated 375 degree oven.

These are so flavorful and easy. Garrett doesn’t like really like mustard so I made a special marinade for him that using half of the mustard and he really liked it.

For breakfast this morning, I made a mini fritatta.

My fritatta included

  • 2 eggs
  • chopped onions
  • broccoli
  • arugula
  • 2 Tbsp shredded cheese

The arugula is so flavorful! It’s awesome.

I’m going to go relax with one of my new books!

  2. That chicken looks to die for! I’ll have to try Berryline, I have a serious addiction to Fro Yo so any new suggestions are always welcome!

    Great job on the run!! Don’t you just love runs like that? And I couldn’t agree more….sometimes the “no plan” runs are the best, where you just go according to how you feel. LOVE those types of runs! :D
